For the locals: if you’re still checking out ham and turkey prices, WinCo Foods is offering a free turkey to shoppers who spend at least $100 on groceries. Some Walmart stores will match this offer. (Call your local store before you go to make sure yours does.) In addition to the free-turkey offer, many stores are offering low prices on frozen and fresh turkeys. Smith’s, for example, is offering a 12- to 14-pound hen turkey for $8 or a 16 to 20-pound tom turkey for $10 with a $35 grocery purchase. Mary Helen’s Magnificent Mustard Sauce

Today is cooler than Christmas at the Collard household–when you’re hard-core Scots, you take St. Patrick’s Day seriously. If you’re cooking tonight, I’m giving you my family’s most secret recipe–Mary Helen’s Magnificent Mustard Sauce. You will want to bathe in it–it’s that good. Happy St Patrick’s Day from the Collards, the MacLeans of Duart, and the Frasers!
Todd here. If I have done anything for you over the years this one thing is what you will remember me for. St Patrick’s Day is coming, and if you are doing the whole corned beef and cabbage deal as we do here it is: Mary Helen’s (Erin’s mom) Magnificent Mustard Custard Sauce. I swear I could bathe in this. (Make triple this recipe–you are going to need it)
2 tbsp sugar
2 tbsp plain yellow mustard
1/2 tsp salt
2 eggs
6 tbsp white vinager
4 tbsp water
Low heat stir till thickened. Next time you see me I expect a hug, but don’t make it weird.

Here’s one I love from their cookbook–
Mini Italian Breakfast Casseroles
Prep Time: 10 minutes
Cook Time: 20 minutes
Makes: 4 servings
WHAT YOU NEED
4 EGGS
3 Tbsp. milk
1 Tbsp. grated Parmesan cheese
Dash pepper
1 cup baby spinach, chopped
4 slices ham OR 8 thin slices prosciutto (about 4 oz.)
HERE’S HOW
1. HEAT oven to 350°F. WHISK eggs, milk, 1Tbsp. cheese and pepper in medium bowl until blended. ADD spinach; stir to mix.
2. LINE four greased 10 sides. DIVIDE egg mixture among ramekins; place in baking pan.
3. BAKE in center of 350°F oven until custard is just set, about 20 minutes. REMOVE from oven; let stand 5 minutes. SPRINKLE with cheese.
Behold The Glory Of The Turdunken!
The Todd achieved the gloriousness of the Turdunken yesterday–boneless duck with cornbread stuffing inside a boneless chicken inside a boneless turkey.

It’s Soup Weather!
Todd here. Soup for the cold weather that’s on it’s way.
Ham and Lentil Soup
2 cups of onions
3 cloves of garlic
4 cups of celery
2 tablespoons of thyme
Bake a ham, seperate meat from bone add most of the ham and the bone to pot. Add 2 large containers of chicken stock fill the rest of the pot with water simmer for 1 hour, then add 1 bag of lentils and simmer until tender. Add fresh thyme before serving. Light a fire in the fireplace, and grab a bowl.

Too Many ‘Maters?
In our circle, tomatoes are feared. Everyone plants too many, then the drive-by ‘matering begins. Bags of tomatoes found on doorsteps in the morning, then you have to figure out who to foist them off on…who’s out of town this week? The Todd has a better solution…
Sun dried tomatoes. Dry them. I dry them in the oven because I don’t like flies on my food. Sliced and placed on foil on baking pan. 200 degrees for 8-10 hours ( if you have a convection oven it’s 225 degrees for 5 to 5.5 hours.) Freeze or place in jar covered with olive oil.
When’s The Last Time You Tasted A Popover?
Todd here. I have not seen a Popover or a recipe for them in 20 years. I ran across this recipe a couple of days ago–it’s time! C’mon, there’s only 4 ingredients, how easy is that?
2 Eggs
1 Cup Flour
1 Cup Milk
1 tsp Salt
Mix ingredients together, do not overbeat! Preheat oven to 450. Grease and flour six 6 oz. ramikins or custard cups. Fill with batter about halfway. Bake at 450 for 20 minutes, then reduce heat to 350, bake 20 minutes more. Serve at once. They’re just as good as you remember!

Northern Bean Goodness–a wonderful soup from Todd!
When the cold temepratures hit I tend to overreact. I find my flannel shirts in storage, take a gander at my stacked firewood and head for the kitchen. This favorite came from my friend Barb Zocco. She grew up in Utah and says this soup was THE taste of fall for her family.It’s so simple, so easy to make and yet so incredibly satisfying.
Soak a bag of great northern beans overnight–they seem to hold up better in the soup. The beans and a ham hock are the traditional recipe, but everyone likes to tinker a little. In the bottom of the soup pan, I brown a diced onion, and throw a little thyme in. Add the beans and the smoked ham hock. Add enough to cover, and simmer. You’ll be adding water 4-5 times during the cooking. When the beans are tender (1-2 hours) you’re ready to go. You can smash some of the beans against the side of the pan for a thicker consistency. It’s that simple, and a perfect soup for a change in the season!
